Cabbage Salad

Chopped Cabbage Salad

1 clove garlic, slightly smashed
6 cups grated or chopped, purple or green cabbage
1/2 carrot, grated on large holes
1/2 cup roughly chopped cilantro
1/4 cup red wine or white wine vinegar
1/4 cup extra virgin olive oil
Splash apple cider vinegar
1/4 to 1/2 chopped jalapeño pepper (optional)
Salt and pepper to taste
Directions
- Rub large bowl with the smashed garlic clove (can then save the garlic clove for other use)
- Add the grated cabbage carrots to the bowl
- Add the vinegars and the olive oil and toss well
- Add the cilantro and the jalapeños if using
Notes
- You can eat it right away, however, the longer it sits the more the flavors will develop. Best flavor several hours later. If it sits for more than a day, you will probably need to add more dressing.
