Cabbage Salad

Chopped Cabbage Salad

Ingredients

  • 1 clove garlic, slightly smashed

  • 6 cups grated or chopped, purple or green cabbage

  • 1/2 carrot, grated on large holes

  • 1/2 cup roughly chopped cilantro

  • 1/4 cup red wine or white wine vinegar

  • 1/4 cup extra virgin olive oil

  • Splash apple cider vinegar

  • 1/4 to 1/2 chopped jalapeño pepper (optional)

  • Salt and pepper to taste

Directions

  • Rub large bowl with the smashed garlic clove (can then save the garlic clove for other use)
  • Add the grated cabbage carrots to the bowl
  • Add the vinegars and the olive oil and toss well
  • Add the cilantro and the jalapeños if using

Notes

  • You can eat it right away, however, the longer it sits the more the flavors will develop. Best flavor several hours later. If it sits for more than a day, you will probably need to add more dressing.
