Heavenly Cocoa Add-In Power Balls

minutesDelicious sweet treat that will not spike your blood sugar (be sure to add nuts or nut butter to prevent spike)
Ingredients
1 heaping cup of nuts. (almonds, cashews, walnuts, pecans), or toasted millet. Use whatever you like, mix several types of mix-ins or use just one type.
Optional: 1 tsp vanilla, ½ cup unsweetened shredded coconut, OR ¼ cup tahini1 cup unsweetened cocoa powder (if use un-“dutched” powder, it will have higher antioxidant content)
2-3 dried dates, pits removed
Hot water as needed, start with 1 tablespoon
Directions
- · Place your choice of nuts in a food processor, pulse for 10 seconds
- Add cocoa powder and two dates and pulse once or twice. (Can add another date at end if not sweet enough for you)
- Add coconut or tahini if using
- Add vanilla if using, and 1 tbsp hot water. If needed, add more water a little at a time until you reach a consistency where you can grab a small portion and roll it into a ball. It should stick together without being too sticky
- Form into balls approximately the size of a walnut
Notes
- This recipe is very flexible; you can add more or less cocoa, or nuts, or dates (though not too many dates if watching blood sugar) or tahini or other nut butter.
- Store in the fridge to minimize oxidation, and to firm them up.
