Lime Cilantro Salad Dressing

Lime Cilantro Salad Dressing

This is great on cabbage salad, or any chopped salad! Dairy-free.

Ingredients

  • Juice of 4 limes

  • Equal amount of olive oil as lime juice

  • Splash apple cider vinegar

  • 1/2 bunch of cilantro with stems

  • Optional small 1 tsp maple syrup (you can use more or less to taste)

  • 1/2 jalapeno pepper (add some of the seeds for very spicy dressing)

  • 1 clove garlic, smashed or roughly chopped

  • 1/2 avocado

  • pinch of cumin

Directions

  • Add all of the ingredients to a blender or use an Immersion blender, or you can use a food processor to blend all ingredients together.
  • If too thick, you can add more lime juice and olive oil
